Merlot 2007
A medium bodied ruby red wine with loads of red fruits and spiciness finishes with plums on the palate. Garnet red and orange appearance, and a savoury, earthy and herbaceous bouquet.

Thai Beef Salad
Serves 4:
800g beef fillet, trimmed of fat
4 tspn uncooked rice – dry roast in the oven until golden brown, then finely ground in a spice grinder
2 red onion, sliced thinly
2 cup fresh coriander leaves, coarsely chopped
1 cup fresh mint leaves, coarsely chopped
¾ cup roasted peanuts, coarsely chopped
Dressing
Juice of 3 limes and 3 lemons
2 tspn raw brown sugar
1 red chilli finely chopped
2 tspn Thai fish sauce
2 tspn soy sauce
Method
BBQ beef fillet until medium rare. Rest beef for 10 minutes in a warm place.
Slice the beef thinly and place into a mixing bowl. Add dressing, rice, onion, herbs and peanuts, and mix well.
